Long longed for, finally it's here: spring!

Fresh green is everywhere, symbolising life, growth and renewal. Spring shows us how new beginnings go and it is definitely time for a re-start. To really get our bodies going again after winter, herbs like nettle and dandelion are perfect for really boosting the metabolism.

Our grandparents already knew about the unique effect of these "weeds" and collected and processed all kinds of herbs in spring. Two of the most important spring herbs are the Nettle and the Dandelion.

The dandelion

For many it is simply a nuisance in the garden, for children a beautiful dandelion and yet it is one of the best local superfoods.
Due to its high vitamin C content, dandelions are often used in spring to make a fresh spring salad - also known as "Röhrlsalat". A real treat with warm potatoes.

Even though the dandelion tastes bitter, it is precisely these bitter substances that make up its unique effect. Bitter taste components are almost completely absent nowadays. They have been bred out of our vegetables for their taste.

Dandelion is perfect here - because the bitter substances it contains support the liver and strengthen digestion. The herb is also used to relieve bloating and flatulence.

The nettle

It is one of the oldest medicinal herbs and is used in many areas of life in healing. In folk medicine it is mainly used in detoxification and purification during spring cures.

However, it not only boosts the metabolism, it also has an immune-stimulating effect and can be used in many ways. Whether as a facial steam bath against impure skin, bath additive for aching limbs or tea for urinary tract problems, this herb is simply so much more than a weed.

You should also not underestimate the small nettle seeds, which, however, only show themselves later - they help perfectly against tiredness, exhaustion and poor performance.

Here's another delicious recipe in which the two herbs can be used to best effect:

Wild herb pesto

50 g rocket
50 g dandelion and nettle
Approx. 100 ml olive oil
1 untreated lemon
1 handful of sunflower seeds
Salt, pepper

Chop the rocket, dandelion and nettle. Roast the sunflower seeds without fat and chop them with a knife. Now put the green herbs and the sunflower seeds in a blender jug and puree with the olive oil. Season with lemon juice and grated lemon zest. Add salt and pepper!
